Dasheen and Eddoes Blue Food

[Colocasia Esculenta] Dasheen variation with eddoes. Native to Southern India/Southeast Asia. Wide distribution throughout the Tropics, perennial and primarily grown as root vegetables. Edible starchy corn. Very inexpensive and available all throughout the year. Blue food include dasheen, eddoes, cassava yam, tannia, sweet potato Staple of carbohydrate It can be grown under flood conditions along with rice. The leaf is large, like elephant ears and red center most sought after. Leaves can be pale or purple. 5Grown where water is abundant. Planting depth influences strength and size, shape of harvested crop. Dasheen leaves can make callaloo, with coconut milk, pumpkin,. Prepared with crab. Eaten with dhal or rice, sada roti when cooked down to a dark green paste like consistency. Dasheen is generally eaten boiled. Soft, custard like and firm and dry when ready. Dasheen contains minerals zinc, magnesium, copper iron, manganese, potassium, vitamin b-6, folates, riboflavin, pantothenic acid and thiamine.

Grilled Chicken Salad Recipe with Avocado and Mango

Antioxidant heart healthy monounsaturated fats Ingredients - 2 tbsps. olive oil, 2 tbsps. fresh lime juice, 2 tbsps. mongo chutney, 1 tbsp. low-sodium soy sauce, 3/4 tsp grated peeled fresh ginger, 4 (4oz) skinless, boneless chicken-breast halves, cooking spray, 8 cups mixed salad greens, 1 cup diced peeled mango, 3/4 cup diced peeled avocado. Preparation - 1. Prepare grill, combine oil, juice, chutney, soy sauce, ginger in a small bowl. Place chicken on large plate, spoon 2 tbsp. oil mixture over chicken. Turn chicken to coat and sit for 5 mins. Place chicken on grill rack coated with cooking spray, grill 4 minutes on each side or until chicken is done, brushing with oil mixture from plate before turning. Arrange greens, mango and avocado. Drizzle reserved dressing over salads. Cal 185/plate Prep time 15 minutes ; Cook time 8 minutes; 4persons

Tea Bread Recipe

Easy for breakfast Ingredients: 12oz hot tea, 12oz dry fruit, 1 egg, 10oz flour, 4oz brnsugar, 2 1/2 tablespoon baking powder, 1/2 teaspoon spice, 1/2 teaspoon cinnamon, little salt. Preparation: Fruits soak in hot tea over 8-12hrs Add egg and sugar to fruits. Sift flour, baking powder, salt, cinnamon and spice. Fold into and pour into a greased loaf pan for baking. Test if ready with skewer to see if dough is clean. Remove from tin. Cool. Can be stored in an airtight container for up to a week. Cooking time: 325deg C Bake 60-75minutes
